Cascina Penna-Currado 'Derthona' Timorasso, 2023 Portugal Pair with salty shellfish in100% Timorasso, what could be the greatest Italian white grape variety. Cascina Penna Currado's only white wine sees a brief skin maceration and fermentation which is unusual for the grape Timorasso, often compared to dry Rieslings from Alsace or the Pfalz. The winemaking here is only employed to add depth of texture without oxidation, and the juice is subsequently aged in stainless steel and amphora. The wine has a mineral backbone like no other
