The grapes benefit from diurnal shift, warm days and cool nights, and develop strong acidity and aromatics. In the cellar, Castel Juval allows for a brief skin contact, to allow the juice to soak up some minerality. The wine is extremely balanced and refreshing, with full aromatics and sharp stone fruits on the palate.
